One of my TDROC friends in Houston put an AC in his Roadster. He used a hot
rod aftermarket system and ran the refrigerant lines to the trunk, where he
built a box for the "underdash" parts. He ran two ducts through the package
tray/trunk wall and only used the AC when his top was up. He did not
recirculate the air, but you could put a return air duct in the system if
desired. It worked pretty well for the small cockpit of the roadster, but
your neck got a little cold sometimes. Insulating the floor and doors and
firewall makes the AC work even better.
