Andy,
I have seen cars with the inter-fender cut away without any problems.  Ron's FJ 
 turbo had bars added , but IMHO I don't think its necessary.  I would extend 
your roll cage to the middle of the engine compartment to stiffen the frame and 
cut out the inter-fenders.  I have a street car with the "X" frame removed and 
it does not show much in the way of flexing (chipped paint in the door jams 
...)  That could be removed and replaced with light weight tubing or aluminum.  
There are some "box" strengthens on the body under the fender I have also seen 
removed.  I would even consider removing part of the front cross member like is 
done for SR and KA installations.   These frame modification would allow easier 
engine removal and removing the transmission without pulling the engine.  ;-) 
besides reducing weight.
