Congrats on getting the engine out and in!
Believe it or not, you might want the heater in Az. It gets a bit chilly in
January/February driving around, having the heater will prolong the driving
months, I am anxious to get mine back in before winter hits. (I have memories
of driving my car in early February with the top up, gloves on, and still
freezing...)

What a feeling!
We replaced battery cables, tightened down all connections and *voila* our
first attempt at an engine swap actually started! After the celebration died
down we started getting antsy to get the '64 with the 1600 engine on the road
again, but still need to do some finishing work.
One thing we were wondering... living in Phoenix we seriously doubt we'll need
the heater (besides the darned cars generate enough heat WITHOUT it!)so we'd
like to completely remove it. Can we plug the outlet from the head or will it
cause problems with the intake manifold or elsewhere?
