I bought a SU kit from Moss many years ago that has a nifty centering tool.
I've broken apart many carbs and have used the tool many times and it works.

They are frequently on Ebay but you can get it from Moss or any other good
British car parts place. Not cheap now, but it's a nice tool set to have.
