Go with the starter interrupt. The ignition cut-out could lead to a
frustrated thief running the battery down or worse still, the thief might
try to roll start it.
Maybe consider a battery disconnect switch, like the sort used in many forms
of racing?
Better still, go with all three. Then cross your fingers the thief isn't
driving a tow truck. ;-)
