I use a 180deg Tstat in my 2000. I have an electric fan which rarely
turns on except sitting in traffic or on a 95 degree day. Normal driving
produces temps around 170-185, depending on speed and load. After a good
flogging at an autocross the temp will climb as high as 210, but quickly
returns to normal.
In my opinion, 190 degrees is fine. Remember, there is some variation
between guages, senders and individual thermostats. If you replace the Tstat
with another of the same rating, it might run at 185 or 195. Same goes for
the guage and sender.
