I may be way off here, but it was always my understanding that the
purpose of the 3-angle valve grinding was to control the size and
uniformity of the contact area.  You don't want the valve seat area to
be too large, since it will more easily be fouled, and you don't want
it uneven either.  The fact that it may or may not improve flow was
secondary.
