I don't know the strength.  Perhaps food grade only comes in one
strength.  Nor do I know of a source.  Dairy industry supplier?
I was hoping this would be "common knowledge" to someone on this list.
Perhaps Mr Nothway could answer the strength question, though I
doubt his New Zealand supplier would be convenient or cheap for US 
customers.

Any current or former dairymen/maids out there?  Surely there's a 
chemist or two?
