Not that I am an expert in this area (anything I have owned has not been in
stock form for longer than 1 week), but you can't get too creative with the
offset either. Check out section 13.3 and 13.4 on the rules for tires and
wheels for the stock category:

Late me take at shot at answering this question since I've asked it so many
times myself. You can run any DOT approved tire in the stock class as long
as its the stock wheel size. Are 17x7 wheels stock on your car, so so you
are okay.
