sometimes goes waaay up (230-240).

Solution may be a blocked "bleed hole" in the thermostat. Don't know what
the experts call them. Most thermostats have a small hole to allow flow
before the thermostat opens. Other than that the bypass hoses which also
feed the heater may be blocked.
I would pull off all the hoses and check they are clear, gently back flush
the system, just remember most heater or radiator cores can't handle full
water pressure. Pressure caps are usually 7 12 psi.
