Andy:
Hesitation normally means that the mixture is going lean during
acceleration,
which often means dashpots. I suppose you could be getting low fuel in your
float bowls - but I think of dashpots when I think of hesitation.
Did you check your dashpot oil level? Sounds like the oil level may have
dropped during your runs, perhaps due to trailing throttle vacuum pulling the
oil past the o-rings in the dashpot.
Did you put fresh diaphragms and dashpot o-rings in during your rebuild?

I completed the rebuild of my stock carb set up on Saturday
night, had a successful test drive that night, and then autocrossed
