I use a filter wrench like Stan does in order to remove my spin-on
filter. I believe I bought it at Sears. Works great.

Until a couple years back I had the standard canister type filter and I
refered to changing the oil in my car as "periodic penance". It was a
total pain. If that's what you're struggling with, I found that the
easiest way to do it was from above. Remove the bolt that holds the
bell housing to the engine letting as much oil as possible drain out the
bottom (and all over the frame) as you remove it. Then tilt the housing
back and slip the filter out between the housing and the engine
(scraping your knuckles repeatedly in the process). From there you can
work the filter out through the top of the engine compartment by
squeezing it past the fuel filter and behind the steering shaft (getting
oil on many things in the process). Reverse the process with the new
filter and then wipe everything down with a rag and some simple green.

This weekend I changed the oil on my '75. As this was
the first working efforts on the car, I was unsure
what to expect. I found out that I had to remove the
clutch slave cylinder to remove the canister from the
car.
