Greg gave you some great advise on how to install the u-joints.
By looking at the tool it appear that the socket like pieces would be used to
remove the cups like Greg stated. You may have to use one of the disc pieces to
help push it out of the yoke into the socket piece.
On the other hand the disc pieces may fit over the end of the cups to support
and even push to guide them into the yoke.
This is all just a guess from looking at the picture. None of them may fit any
of the mentioned parts that you are working with.
On the grease question, I was told by an old mechanic that there needs to be
enough grease in the hub to adequately keep the bearing in grease in case the
hub gets hot and the grease starts to go to a liquid state to keep the bearings
and race cool. If it get to hot the grease will start to come out and the
least problem will be a fried bearing and race.
