Joe---The gas pedal rod is soft steel, so it can be bent down just below
where the pedal 'blade' meets the pedal rod. The pedal stop can also be
lowered, as you thought.
Adjustment of the pinch bolt at the throttle shaft cross connection is
part of this move.
You DO want the pedal stop to come into play under full throttle, to be
sure that the carb linkage is not put into any bind.
When all of this is done, the gas pedal will be about 3/4" below the
brake pedal when both are at rest, and your carbs can still be opened
fully.
The seat tracks can also be moved to give more leg room. It will require
that you give up some of the recline. Others have done this and may come
in here to tell you how they did it.
