A quick Google search for "triumph temperature sender resistance" didn't
yield any exact hits, however, this Sunbeam Alpine page:

suggests at room temp its resistance should be measured in hundreds of ohms,
and that a 60-70 ohm resistor in place of the sender unit should put the
temp gauge's needle about halfway.
I know that's a far cry from a perfect answer, but gives you some ballpark
figures to play with until you get something better.
