The answer to this is fairly simple. If you have stock springs, you should
use the stock re-valving. You could elect the "heavy duty" valving, but
with stock springs, the extra dampening effect of the shocks is not
needed.
Conversely, if you have uprated springs, you should have uprated shocks.

The ride comfort is the result of suspension compliance. The softer the
suspension, the better the ride. The tradeoff is that the softer ride
gives up performance in terms of body roll, roll centers etc.
Given that your preference seems to be a softer ride, you should probably
opt for standard valving.
Note that if the stock valving/rebuild is too soft for you, you can change
the damping on your own by changing the viscosity of the damper fluid.
Moss sells 40 wt. shock fluid, for example.
