Walt---You may have noticed by now, if
you didn't already know it, that your '69 model ZS carb has the
adjustable JET, rather than the adjustable needle like the later carbs.
It appears that car manufacturers that sold here in the US were supposed
to keep this a secret from the owners, so all are listed as
"non-adjustable." You can adjust the air/fuel ratio by screwing this
jet up (to lean out) or down (to richen) It only takes quarter-turns or
less to impact the mix, so since you have these all apart you can check
these jet settings be measuring how far each are down from the top of
the bridge. This can be done by using a depth mic or the tail piece of a
vernier calliper. Getting them even goes a long way towards a smooth
running engine. All needles are fastened to the damper/piston, and rise
in response to the throttle position.
